Hummus

15 to 19 oz. can chickpeas (garbanzo beans), drained
1 or more cloves of garlic, quartered
2 Tbs. of lemon juice (juice of one large lemon)
1/4 tsp. salt (to taste)
1/4 tsp. black pepper (to taste)
1/4 cup tahini (sesame paste)
1/4 cup boiling water
Pita bread

In a blender, combine the chickpeas, garlic, lemon juice, salt, and pepper. Blend until smooth. Add the tahini and boiling water. Chill, if desired. Serve, drizzled with olive oil.
