Erina's Salsa Recipe

1 1/2 gallons green/red tomatoes & peppers
One onion chopped/ground up
3 T garlic powder
2 T parsley
2-3 c. apple cider vinegar
2-4 C sugar-add to taste

Simmer 3-4 hours.

Where Have I Been??

Holy cow!! Didn't realize it had been such a long time since I posted!! Time sure flies these days...thought that retirement would be boring but instead seem busier than ever. Of course, a lot of it is just plain fun stuff so am really loving the way life has led us...



This is a picture out my kitchen window. There were actually 4 deer, 2 geese and 2 cats. The deer and the cats are permanent guest. The geese stop by, lay their eggs and eventually head north. Last year, we started feeding them.. the last day they were here one ate out of my hand. Didn't take them long to make their way to the house for food this year!



Not sure when the last pair of socks was finished... so glad to have these done! 72 stitches, size 1 needles and Deborah Norville Serenity sock yarn. I do not like this yarn all that well. Have more that was purchased at the same time and will use it but it is not nearly as nice as some of the other sock yarns I've used. In the end, you get what you pay for! The yarn is definitely stretchy.

Lucas has finished his Masters in Environmental Management (though graduation isn't until June), Laura will graduate in June with her MSW and Jason is working on his MSW. Lucas will be leaving the Air Force the end of this month... can't believe it has been eight years since he left. It was great that they all enlisted but especially with the current political situation, I am glad they will all be out of the military.

Off to start a new pair of socks-hopefully this pair doesn't take so long!

Quick Veggie Quiche

1 c each sliced fresh mushroooms and chopped broccoli
1 pie crust
5 eggs
1/3 c mayo
1/3 c milk
6 oz velveeta, cut in 1/2" cubes
4 green onions, sliced
salt & pepper to taste

Heat oven to 375. Cook mushrooms and broccoli in skillet sprayed with Pam on med heat 8-10 minutes or until crisp tender. Set Aside.

Line 9" pie plate with crust. Beat eggs, mayo, salt, pepper and milk with whisk until well blended. Stir in cooked veggies, velveeta and onions. Pour into crust. Bake 40 mins or until center is set and top is golden brown. Let stand 10 mins before serving.

Grandma's Strawberry Shortcake

Bake 350 for 45 minutes. For large size-use a regular 9 x 13 pan, for small size a 8-9" square.

Large-
1/2 c shortening
1 1/2 c sugar
2 eggs
3 c flour
4 t baking powder
1 c milk
1 t vanilla

Small-
1/4 c shortening
3/4 sugar
1 egg
1 1/2 c flour
2 t baking powder
1/2 c milk
1/2 t vanilla

Put all ingredients in bowl. Mix with spoon. Put in greased cake pan... bake.
